Dim Sum District opened its first 40-seat room in Wan Chai in 2010 with a simple idea: serve dim sum made to the standard of a hotel kitchen, all day, at prices people could pay twice a week. Eleven restaurants later the group employs around 400 people across Hong Kong Island and Kowloon.
The kitchens are the point. Dumplings are folded on-site in every restaurant, the group runs its own char siu programme, and head chefs have real menu autonomy within a shared standard. A central commissary in Chai Wan handles stocks and sauces so that individual kitchens can concentrate on service.
Restaurant work is hard, and the group's reviews say so. Management has invested in a five-day roster for kitchen staff — rare in Hong Kong Chinese restaurants — and a formal apprenticeship for dim sum chefs, but service weekends remain long and the group is candid that this is the industry it is in.
